In each of Lanzarote’s main tourist resorts there are an excellent variety of international restaurants including Spanish cuisine, home from home British favourites, Indian, Chinese, Italian, Japanese, Mexican and Thai. It is also possible to find traditional Canarian restaurants both in the town centres and in the less busy coastal villages, such as El Golfo, Arrieta and Orzola. El Golfo is said to have some of the nicest sea food restaurants on the island and the old harbour area in Puerto del Carmen is worth a visit. Being a small Island, it should come as no surprise that some of the more popular dishes to be found in Lanzarote are sea food. Locally caught parrot fish, snapper and tuna are the most common dishes. There are many different sea food restaurants around Lanzarote each offering something a little different from the next. Some of the traditional Canarian dishes include Papas Arrugadas (small potatoes) with Mojo sauce, Pimientas de Padron (fried green peppers), Albondigas (meat balls in tomato sauce), Estofado (Canarian stew) and Potaje (Canarian soup with red lentils). Lanzarote is also very popular for its local wines; its wine region is home to a number of thriving bodegas, producing a full range of wines encompassing red, white and rose. The vast majority of production, around 75% is dedicated to the Malvasia grape, which produces sweet and dessert wines of a high quality. Your waiter will be able to suggest a perfect wine to compliment your meal.

Papas Arrugadas (Wrinkled Potatoes) 2Kg (5lbs) small to medium potatoes unpeeled (50 - 75mm; {2 - 3"}) 200 gram (7 1/4 oz.) Sea salt 1) Wash the potatoes. 2) Put salt in a large saucepan 3) Add water to a depth of about 3.5 cm (1 1/2") 3) Add potatoes (they do not have to be immersed in the water) 4) Cover the potatoes 5) Boil slowly for about 20 minutes. 6) Drain and steam dry over low heat. (a white salt layer should form on the potatoes and they should be slightly wrinkled) When finished, coat potatoes with a layer of mojo sauce and you have Canarian "Papas con Mojo"

Mojo Sauce Peel and section one whole, small clove of garlic Add 1 large table-spoon of cumin powder Add 1 large tea-spoon of paprika Add 1 large tea-spoon of sea-salt Add a little olive-oil and grind all of it into a paste (make sure you grind out all the lumps of garlic!) Scrape the mixture into a blender. Use more olive-oil to get all the mixture out. Add to the blender 1/2 a red pepper, finely chopped and blend. add another 1/2 chopped, red pepper and blend add another 1/2 chopped, red pepper and blend add another 1/2 chopped, red pepper and blend (so 2 whole red peppers in the end) add more olive oil to dilute as required or leave it as above for nice and spicy.

Estofado ingredients: For 4 main course servings
3 tablespoons of olive oil 500g stewing beef 250g carrots peeled and cut into large chunks 1 medium onion chopped 3 tomatoes skinned and chopped 1 tablespoon of paprika 2 cloves of garlic finely chopped 1 teaspoon of flour 500g of potatoes peeled and cut into large chunks 1 wineglass of white wine 250ml of beef stock 150ml of water salt freshly ground black pepper saffron or yellow food colouring

Preparation: Heat half the oil in a large, flameproof cooking pot. Put the meat in the hot oil and brown.In a small frying pan heat the rest of the oil, add the onion and garlic and fry for about 5 minutes. Add the flour and the paprika and fry for 5 minutes more being careful not to burn this mix. Add the onion mix to the meat pot, add the white wine, stock and water and bring to the boil. Cook this for about an hour and a half. Add the carrots, chopped tomatoes and a little saffron or a teaspoon of yellow food colouring to the pot and cook for about 25 minutes. Then add the potatoes and a little more beef stock if necessary and cook for another 20 -25 minutes until the potatoes are cooked. Serve it with some crusty bread.
